Bruna Alpina

Characteristics

Alpine Brown cattle originated in the Italian and Swiss Alps. Selected for resilience in mountain climates and the ability to graze difficult terrain, it is a dual-purpose breed valued for both milk and beef.

The coat is uniformly brown with a dark muzzle edged in pale hair. Technical documents published by ANARB give an indicative adult female weight of 500–700 kg; stature is assessed linearly in the type programme rather than set as one breed limit.

Taste

With correct finishing and ageing, Brown Swiss beef can offer a rounded, savoury, medium-intensity flavour, good juiciness and a pleasantly substantial grain. Choose it for a versatile, satisfying offer: well-aged loin and rump for grilling or sliced steak, round cuts for roasting, and forequarter cuts for braising. For end-of-career animals, longer ageing enhances their greater intensity in slow-cooked dishes.
