Cachena

Characteristics

Cachena is a cross-border native cattle breed conserved in northern Portugal and Galicia. It is among Europe’s smallest cattle populations and is adapted to low-input mountain areas, where it also contributes to land management.

It has a yellow-to-chestnut coat and long lyre-shaped horns. The linear classification manual reports adult means of 279.75 kg and 106.75 cm for females, and 407.38 kg and 117.25 cm for males; these are population measurements, not minimum or maximum limits.

Taste

Cachena tends to show a clean, fine and measured flavour, compact grain and a leaner impression than heavily marbled breeds. Choose it for a regional menu or for clients wanting lighter yet distinctive beef: fillet, loin and rump for quick cooking, with shoulder and forequarter muscles for casseroles and stews.
