Galloway

Characteristics

Galloway is a beef breed from south-west Scotland. It is naturally polled and includes black, dun and red cattle; Belted, White and Riggit animals are registered in separate sections of the Canadian herd book.

The double coat reduces the need for a thick layer of subcutaneous fat in cold climates and suits extensive systems. The Canadian association gives 454–635 kg for cows and about 816 kg as the bull average; it does not set a single adult height.

Taste

Galloway can offer a decisive, slightly rustic beef flavour, compact grain and good juiciness when marbling is sufficient. Choose it for clients seeking character and beef associated with extensive farming: well-aged rib and loin on the grill, with chuck and short ribs for smoking, braising or stewing.
