Blonde d’Aquitaine (Garronese)

Characteristics

“Garronese” is the name used in the Italian trade for Blonde d’Aquitaine. The modern French breed was formed in 1962 by combining south-western populations including the Garonnaise, so describing it as an old Italian breed would be technically incorrect.

It is a large-framed, wheat-coloured beef breed with fine bone and substantial muscular development. The French breeding organisation gives 750–1,150 kg for mature females and 1,100–1,400 kg for males.

Taste

Blonde d’Aquitaine, often called Garronese in Italian trade, primarily offers lean beef with a clean, delicate flavour and a fine yet substantial grain. Choose it when clients want lean portions with little fat: fillet, striploin and rump for quick cooking, and round cuts for roasting; good ageing and careful cooking bring out the best in prime cuts.
