Grigia Alpina

Characteristics

Alpine Grey is a native breed of the central Alpine arc, raised mainly in South Tyrol and neighbouring mountain areas. It is dual-purpose and selected for longevity, fertility, milk quality and beef production in demanding systems.

The coat ranges from light grey to silver and is darker in males. The breed association gives 550–650 kg and 130–137 cm at the withers for females, and 900–1,000 kg and 138–147 cm for males.

Taste

Alpine Grey can produce savoury, balanced beef of medium intensity, with compact grain and moderate juiciness. Choose it for clients seeking a recognisable Alpine profile without dominant marbling: well-aged loin and rump for grilling or sliced steak, round cuts for roasting, and shoulder or chuck for braising.
