Characteristics

Highland is a Scottish beef breed adapted to cold weather, wind and marginal grazing. Its double coat and long horns are typical traits, while colour and size vary among bloodlines and production environments.

The Highland Cattle Society publishes measurements from sale bulls rather than a universal adult limit: in February 2025 the mean was 597 kg at two years and 743 kg at three years. These figures describe that population and age groups, not a fixed breed weight.

Taste

Highland can express a pronounced, rustic beef flavour, substantial grain and good juiciness when intramuscular fat is sufficient. Choose it for a distinctive pasture-linked offer: rib and loin after suitable ageing, short ribs and chuck for smoking or slow cooking, and mince for full-flavoured burgers.
