Limousin

Characteristics

The international breed name is Limousin, after its area of origin in west-central France. It is a specialised beef breed selected for growth, muscling, efficiency and maternal traits.

The British standard describes a large-framed but fine, strong-boned animal with a broad, well-muscled back and deep hindquarters. It gives mean mature weights of 650 kg for females and 1,000 kg for males.

Taste

Limousin tends to provide lean beef with a clean, decisive flavour and a fine but compact grain. Choose it for clients seeking high lean yield and little visible fat: fillet, striploin and rump for quick cooking, round cuts for roasting, and shoulder for braising. Suitable ageing and avoiding overcooking are essential to keep prime cuts tender and juicy.
