Minhota

Characteristics

Minhota is a native breed from Entre Douro e Minho in Portugal; until 2002 its official name was Galega. DGAV describes it as Portugal’s only historically triple-purpose breed—beef, dairy and draught—with dairy and draught functions now residual.

It is medium-to-large, rectangular in outline and light red to straw coloured. The official sheet does not set one adult weight and height; for the main product it instead reports slaughter at a mean 6.2 ± 1.15 months and a 149.6 ± 31.41 kg carcass in animals under eight months.

Taste

With Minhota, flavour changes substantially by category: veal is more delicate, pale and tender, while beef from mature castrated males is deeper, more persistent and substantial and needs longer ageing. Choose the former for quick cooking, light roasts and an accessible flavour; choose the latter for tasting steaks, braises and slow-cooked dishes.
