Characteristics
Rubia Gallega is a native Galician cattle breed specialised for beef. The Spanish breeding programme aims to conserve the breed and improve reproductive efficiency, growth, carcass traits and product quality.
It is medium-to-large, with a blond-red coat and developed muscling. The official standard published in the BOE gives reference figures of 700 kg and 135 cm for mature females, and 1,000 kg and 145 cm for males.
Taste
With Rubia Gallega, category clearly changes the profile: young cattle are more delicate and straightforward, while a well-finished, aged mature cow or buey can offer deep beef flavour, sweet fat and a long finish. Choose heifer for a balanced, approachable steak; choose mature cattle for an intense tasting experience, using rib or loin on the grill and forequarter cuts for slow cooking.
