Salers

Characteristics

Salers is a native breed of France’s Massif Central, recognisable by its mahogany coat and lyre-shaped horns. It is used mainly as a beef suckler breed, while a smaller population retains traditional dairy production for cheese.

It is hardy, mobile and suited to upland grazing. The Salers Cattle Society gives 650–850 kg and 144 cm for mature cows, and 1,000–1,200 kg and 154 cm for bulls.

Taste

Salers can express a deep, rustic beef flavour with grassy nuances, compact grain and good juiciness in suitably marbled cuts. Choose it for clients seeking intensity and regional character: well-aged rib and loin over coals, shoulder and chuck for braising, and cheek or collagen-rich muscles for slow cooking.
