Shorthorn

Characteristics

Shorthorn developed in north-east England. Beef Shorthorn and Dairy Shorthorn now represent distinct populations and objectives, so a beef catalogue should state whether the product comes from the beef line or from crossbreds.

Beef Shorthorn may be red, white or roan and includes horned and polled lines. The New Zealand society gives 500–700 kg for mature cows and 800–1,000 kg for bulls; the same source does not set a standard height.

Taste

In well-marbled lots, Shorthorn offers a rounded, harmonious flavour with lightly sweet and buttery notes, tender grain and good juiciness. Choose it for a balanced premium offer that is rich without being extreme: rib-eye and striploin on the grill, rump and round cuts roasted, and mince for tender, flavourful burgers.
