Characteristics

Wagyu does not identify a single breed: Japanese rules recognise four native cattle populations, with Japanese Black overwhelmingly dominant in commercial production. Weight, stature and marbling potential must therefore be tied to the breed, bloodline and certification system of each lot.

Japanese Black is intensively selected for carcass quality and intramuscular fat. Australian data for Fullblood females report a mean mature weight of 462.7 kg; this figure cannot automatically be applied to the other three Wagyu breeds or to crossbreds.

Taste

Selected Wagyu marbling delivers rich umami flavour, buttery and sweet notes, exceptional juiciness and a melting texture driven by intramuscular fat. Choose it for a premium tasting or a sharing dish, served in smaller portions; rib-eye, striploin and rump perform best with fast, high-heat cooking.
